As the winter comes one of the best, freshest, and most comforting soups is Vietnamese Pho. Sadly, the rice noodles are very carb heavy. Here’s a great recipe to avoid carbs, either to keep from counting and pumping yourself full of insulin, or if you are using keto to control it.
To Make the Broth:
8 cups of water
8 cubes of beef bouillon
1/4 teaspoon of ground cinnamon
1/2 teaspoon of ground pepper
1/2 tablespoon of ginger powder
1/4 finely sliced onion
Juice of 1 lemon
For your bowl (split into the servings)
1 small package (2 cups) Shiritaki noodles
1/2 lbs Roast Beef, sliced
1/2 of a medium onion silced
1/2 cup scallions sliced
On a separate plate, the shared fixings
To make the broth:
Combine all the ingredients into a large pot, and heat until boiling. Then let it simmer for an hour.
Put the bowl ingredients into two to four bowls, depending on appetites. Then ladle the broth over the ingredients and serve.
Diners will then add from the shared plate as they wish. Hoisin will add a salty barbecue flavor, and the sriracha will add spice. Bon Appetit!
