Pizza is one of the things that those that have to avoid carbohydrates (namely those with diabetes) miss most. I think chips may be the other. I’m happy to say that low point in your carb-counting life is over! This is a simple recipe, that from start to finish should only take about 20-30 minutes.
This is a simple, and fantastic, recipe that even those with that have to prepare meals for a family will love, you won’t get complaints over this one!
Here is a recipe for 4 flat breads / Pizzas.
2 Large Eggs
2 cups of Mozzarella Cheese
2 cups Riced Cauliflower (grate the uncooked cauliflower on a grater or in your food processor)
2 minced garlic cloves
Preheat your oven to 450 degrees.
Line a cookie sheet with parchment paper and spray it with your favorite non-stick spray.
In a medium bowl, mix the riced cauliflower, eggs, basil and mozzarella cheese. Then divide that mixture into 4 amounts and press evenly on the parchment paper to flatten the mounds.
Once these are cooked, you can do with it as you wish. They are great for a bread/pita/chip substitute, or for using them as a pizza crust, where you would add your sauces (white sauces are carb free, and absolutely decadent), cheese, and other toppings and then bake them once more.
