Summer Slaw

A great light dish, even better with fish tacos!  Super low carb with a little fiber.

Ingredients:

    • 2 tblsp apple cider vinegar
    • 1 1/2 tsp Dijon mustard
    • 1 1/2 tsp chopped fresh dill
    • 1 tsp poppy seeds
    • 1 tsp sesame seed oil
    • 1 teaspoon olive oil
    • dash of salt and pepper

  • 1 cup finely sliced green cabbage
  • 1 cup finely sliced red cabbage
  • 1/2 cup fine julianned carrots

Low carb summer slaw

Mix spices and oils, vinegar, and oils in a bowl. Add cabbage and carrots, and mix well.  Serve chilled or room temperature.
